Ditch the heavily processed store-bought versions and try my super simple vanilla nut granola! Bonus: it makes your entire house smell amazing. This is my go-to healthy snack when I’m craving a sweet and salty combo. I serve it with greek yogurt and fresh fruit for a balanced breakfast or combine it with almond milk and dark chocolate chips as a satisfying dessert. What you’ll need
- 3 cups organic gluten-free rolled oats
- 1 cup raw mixed nuts
- 1/2 cup hemp seeds
- 1/4 cup chia seeds
- 1 teaspoon cinnamon
- 1/4 teaspoon sea salt
- 1/2 cup unrefined coconut oil
- 1/2 cup honey
- 1 tablespoon vanilla extract
Instructions
- Preheat oven to 350 and line a baking sheet with parchment paper.
- Combine oats, nuts, hemp seeds, chia seeds, cinnamon and sea salt in a large bowl. Set aside.
- In a microwave-safe bowl, place coconut oil in the microwave for approximately 1 minute until melted. Whisk in honey and vanilla extract.
- Add coconut oil, honey and vanilla mixture into your dry ingredients. Stir until oats and nuts are evenly coated.
- Spread mixture onto your lined baking sheet in one thin, even layer. Gently press down with a spatula.
- Bake for 20-23 minutes, until the edges start to brown. Stir halfway through (10-12 minutes). For a crispy and extra-clumpy granola, pat down the stirred granola with a spatula.
- Let cool entirely before breaking into pieces. At least 1 hour, but I leave mine covered overnight.
- Enjoy on its own or as a topping for yogurt, oatmeal and ice cream!
